My 5-Minute Recipe For the Fluffiest Snow-Day Pancakes from Scratch!
I have been making pancakes on this farm for a long time. Since publishing my original recipe years ago,I have picked up tips from far better bakers than I. I’ve learned to make them thicker, cakier, and better at absorbing all the warm butter and syrup you can handle. These aren’t for every day, darling. But I promise you they can make any snow day feel like a holiday.
I’ll keep this brief. I may be a memoirist, but I know nobody that actually needs to use a recipe wants to read seven paragraphs of backstory. But please, note the following directions because for best results you can’t just “mix it all together and pour on a greased skillet” - at least not if you want them to turn out as advertised!
Stuff You Need (Not listed in Ingredients Below)
Big Mixing Bowl (dry bowl)
Smaller bowl (wet bowl)
Whisk
Stick of Butter
Skillet (I use cast iron. Use whatever you want, it’s just pancakes.)
Small saucepan for berry syrup
One of those vision-impaired wooden spoons for mixing
Oven, Range, Hot Plate, Etc.
Stuff You DO NOT Need
& SHOULD NOT USE
Anything you plug into a wall that isn’t your stovetop.
No KitchenAids/Standing Mixers.
No Air Fryer or mini ovens.
No electric hand mixers.
