I attempted the Apple Jack Cake for our Friendsgiving feast and it did not disappoint. I followed the recipe exact and it came out perfect! It was absolutely delicious. I opted to top it with a dark brown sugar cream cheese frosting instead of the glaze to give it a little "extra" for the holiday, but it went so fast, I'll be making another brick of it next weekend and will be giving the glaze a go this time! It's so perfect for cold weather and a cuppa in the evening.
Cream these together at high speed with a mixer until brown sugar is well incorporated.
Then at low speed add about 3 cups of powdered sugar.
You can chill if needed to stiffen a bit before topping a cooled cake.
Note: The dark brown sugar is made with molasses, so it adds moisture to the frosting without needing to add milk, and with this, your frosting may be less stiff than you are used to. You may add more powdered sugar, or a splash of milk to make it to your liking.

My frosting recipe:
1 brick of room temp Philadelphia cream cheese
Half a stick of softened butter
1 Tsp of vanilla
¾ c brown sugar.

I love that serving size for this cake is slab! Correct! It’s so good the next day!
It’s still over 100 degrees here in central California, but I think baking this cake might just tempt Autumn to make an early appearance!
